The food philosophy

Cooking for the casino hotel clock.

A casino hotel keeps a different rhythm. Guests eat before an evening out, pause over a plate between conversations and return for supper after the room has quieted.

That is why the kitchen stays clear and practical: excellent coastal produce, enough warmth, and a real meal available at the hours people actually keep.
